Crustless Lemon Cream Pie

I had gastric bypass 7 years ago and love making desserts into food I can eat without getting sick. As any bypass patient knows when we consume too much sugar we get deathly sick.

This is a crustless pie so much easier to make..

2 packages (4-serving-size) sugar-free lemon gelatin
2 cups boiling water
1 Cup Ice
2 Cups of Sugar Fee Whipped Topping ( Cool whip does offer this in select stores)
If not get the low fat one.

What To Do:

In a large bowl, dissolve gelatin in boiling water; add ice cubes and stir until melted.
Add whipped topping; fold together gently. Pour into a 9-inch deep-dish pie plate. The whipped topping will naturally separate from the gelatin once poured into the pie plate, creating a top layer.
Cover, and chill at least 3 hours, or until set.

Nutritional Information: With the Light Cool Whip

Less Sugar with the Sugar Free!

After Gastric Bypass 175... Still need to lose more.. After Suffering depression after the surgery I was put on medication that I gained 35 back..holding about 175.. I went down to 140..
