July 4th!!!
Are you invited to a July 4th BBQ? Or hosting a get together?
Well bring something delicious and your guest can have a extra helping of potato salad!!!
I love July 4th! It is the halfway point (I think ) of summer! I am not a summer person and always anxiously await the fall season I like when I am at the halfway point to my favorite time of year!
So you have the perfect red, white and blue outfit.. now steal the show with this dessert!
Need ideas for July 4th dressing?
This cake is gorgeous and everyone will let you know how cute it is and they will be floored when you let them know it is healthy and does not have added sugar!
Ingredients:
1 quart Strawberries
1 1/2 Cups Boiling water
2 packages Sugar Free Strawberry Gelatin (smaller package)
Ice Cubes
1 Cup Cold water
1 Package of pound cake:
(sometimes the grocery store has a sugar free fresh version)
-Sara Lee has a light version.. not recommended
-I would get the Pillsbury yellow cake mix-- omit one of the eggs.. this will create a thicker cake..
2 packages (8 ounces) of cream cheese..
( use regular)
6 teaspoons of Splenda
1 Tub (8 oz) Sugar free cool whip.. ( or store brand)
1 Cup Blueberries
Directions:
Slice 1 Cup of the strawberries.. Set aside
Halve the remaining 3 cups of strawberries.. set aside
Stir in boiling water in the
Stir in the boiling water into the gelatin mixes in a large bowl and stir for at least 2 mins until completely dissolved
Add enough ice cubes to the cold water to measure 2 cups.
-add to gelatin; stir until completely melted
-refrigerate for 5 mins
-while waiting for a little thicking of the gelatin mixture
Line bottom of 13 X 9 dish with cake slices.
add sliced strawberries to thicken gelatin; stir gently and spoon over cake slices
Refrigerate for 4 hours
Beat cream cheese and splenda with a wire whisk until well blended. Gently stir in Cool whip.
Spread over gelatin.
Arrange the strawberry halves like stripes on a flag and arrange blueberries to represent the stars...
I am happy I had my weight loss surgery.
Believe it or not but losing weight does make people look at you differently. I should have stuck to the rules my surgeon gave me. About 2 years after surgery I started to add regular sugar into my diet and started to gain weight quickly.... I was the one that did have dumping after eating sugar. Not sure why I went back because I could make anything sugar free and feel satisfied.
I even had my favorite Pie shop make me a sugar free raspberry pie for my birthday.
So if I have any advice do not eat sugar when you have had the RNY weight loss surgery.
