No Bake Hawaiian Pie

No Bake Hawaiian Pie

Do you need something easy to make for desert! Well here is the easiest pie to make and it is healthy. Well my version anyway!


1 Can (20 ounces) Crushed Pineapple... Not in syrup. Undrained
1 Package of Sugar Free Instant Pudding/Pie Filling
1 (8 ounce) Non Fat Yogurt Plain
1 an of Sliced Pineapple.. drained and halved
8 maraschino cherries
2 Tablespoons of flaked coconut
1 Shortbread Pie Crust (already made)

In a large bowl combine crushed pineapple with the dry pudding mix and add yogurt and mix until well combined.
Spoon into pie crust and top with the pineapple slcies and cherries.
Sprinkle with coconut.

Cover for at least 2 hours and then serve.


I love to make over my favorite recipes and if you have anything that you want me to try and tweak I would be more then happy to!

I did have gastric bypass RNY and can not have sugar so I make over recipes and make them so we can eat them and not feel left out!

I lost over 170 pounds with my RNY...



I also have a clothing business! Hey we want to look good after all that weight loss! Right?

4th Of July; Bring a Healthy Dessert

July 4th!!!

Are you invited to a July 4th BBQ? Or hosting a get together?
Well bring something delicious and your guest can have a extra helping of potato salad!!! 

I love July 4th! It is the halfway point (I think ) of summer! I am not a summer person and always anxiously await the fall season I like when I am at the halfway point to my favorite time of year!
So you have the perfect red, white and blue outfit.. now steal the show with this dessert!

Flag Cake!!
This cake is gorgeous and everyone will let you know how cute it is and they will be floored when you let them know it is healthy and does not have added sugar!

Ingredients:
1 quart Strawberries

1 1/2 Cups Boiling water

2 packages Sugar Free Strawberry Gelatin (smaller package)

Ice Cubes

1 Cup Cold water

1 Package of pound cake:
(sometimes the grocery store has a sugar free fresh version)
-Sara Lee has a light version.. not recommended
-I would get the Pillsbury yellow cake mix-- omit one of the eggs.. this will create a thicker cake..

2 packages (8 ounces) of cream cheese..
( use regular)

6 teaspoons of Splenda

1 Tub (8 oz) Sugar free cool whip.. ( or store brand)

1 Cup Blueberries


Directions:
Slice 1 Cup of the strawberries.. Set aside
Halve the remaining 3 cups of strawberries.. set aside

Stir in boiling water in the 

Stir in the boiling water into the gelatin mixes in a large bowl and stir for at least 2 mins until completely dissolved

Add enough ice cubes to the cold water to measure 2 cups.
-add to gelatin; stir until completely melted
-refrigerate for 5 mins

-while waiting for a little thicking of the gelatin mixture

Line bottom of 13 X 9 dish with cake slices.

add sliced strawberries to thicken gelatin; stir gently and spoon over cake slices
Refrigerate for 4 hours

Beat cream cheese and splenda with a wire whisk until well blended. Gently stir in Cool whip.
Spread over gelatin.
Arrange the strawberry halves like stripes on a flag and arrange blueberries to represent the stars...

I am happy I had my weight loss surgery.
Believe it or not but losing weight does make people look at you differently. I should have stuck to the rules my surgeon gave me. About 2 years after surgery I started to add regular sugar into my diet and started to gain weight quickly.... I was the one that did have dumping after eating sugar. Not sure why I went back because I could make anything sugar free and feel satisfied. 
I even had my favorite Pie shop make me a sugar free raspberry pie for my birthday.

So if I have any advice do not eat sugar when you have had the RNY weight loss surgery.

Italian Spaghetti Sauce...

Italian Spaghetti Sauce!


I love my own spaghetti sauce! My mom was Italian and she always cooked her own sauce. I was really never interested in it until I was married and I am blessed my sister taught me how to make sauce and she is the best!
I love spaghetti sauce so much after my surgery I used my recipe to make a tomato soup. I controlled the ingredients and it helped me with my cravings


When I always made my sauce the recipe calls for sugar? 
That is not going to work especially 1 week after bypass surgery!
I tried and made this with splenda and it actually taste better.
I know some people are going to say... the fake sugar is bad for you and so is being 300 pounds. You need to chose your battles.  This is what I need to do in order to maintain a healthy weight. I am not omitting sugar to look like a super model.

Here is the recipe!

4 Cans of Crushed Tomatoes

I use Dei Fratelli.... ( I have tried to use another brand or store.. it never taste right)

4 Cloves of Garlic

5 tablespoons of dried basil.

2 teaspoons of black pepper

2 Tablespoons of Splenda

2 tablespoons of Olive Oil

1/3 Cup of Parmesan Cheese


- Heat Olive Oil and Pressed Garlic (or chopped) I like to press the garlic.
Over Med Heat

Heat for 1-2 Minutes but do not burn garlic

-Add tomatoes Black Pepper, Basil and sugar

-Stir often... Bring to a boil

Reduce heat and simmer for 2-3 hours

(for the first hour... do this uncovered)
Then cover the sauce and simmer

-Add cheese and simmer for additional 5 minutes

This will make about 4 to 5 jars... can them and store them so you always have this on hand... and don't tell anyone but I add a little of milk to make it creamer for a soup.. or make it into a creamier sauce (Vodka Sauce) I use this in a recipe call Seashore Pasta

Death by Chocolate!

Death by Chocolate

I remember making this every Thanksgiving holiday! I recall the Thanksgiving after my weight loss surgery and I said oh no how am I going to make this so I can have some?
My husband said "you don't need to make it just make something else." No I don't want to make anything else! So The weekend before I tested this and it was perfect! I posted this on facebook and so many people were amazed.

So let's make this!!!

4 boxes of Mouse or instant chocolate pudding!; 
--------Sugar free is available. I know the pudding is easy to find but the mouse works best and I found it in the diabetic food isle. They have some great sugar free items!

1 container of Cool Whip Sugar Free Topping

1 box of Sugar Free Brownie Mix 
---Pillsbury has this with the regular cake mixes

1 Cup of Strong coffee 
- The original recipe calls for Kahlua. I do not drink and liquor has so much sugar.. best to stay away from it...

4 bags of health like candy.
You want to put these in a food processor or put in bag and get these crumbled
- The original recipe calls for 6 full size health or Skor candy bars.
Russell Stoffer has these in a green bag with the Sugar free items in the candy section... Walmart sells them for the best price.


Let's make this!
You want to make the brownie mix first since this needs to cool.
Cook this according to the package directions. 
(remember to save your cold coffee from the morning)

Poke hole in the brownie and pour your cup of strong coffee all around
Let this cool completely so it is easier to cut.

-prepare the mouse or pudding. Set aside

-Crumble or cut brownie mix.

In glass trifle bowl start layering..
-Brownie
-Mouse
-Whipped Topping
-Candy Bars

Repeat layers...

Chill and Serve
Prepare to get so many complements!
My in laws expect this every year and they loved this version as well....

Cranberry Power Balls!!!!! KIDS Love them too!!!!

Cranberry Power Balls!

My son is such a picky eater and he hates cranberries!
So since these look like no bake cookies he was all over them! I made these prior to my knee surgery and when I came home they were mostly gone. I saw this recipe and thought this would be awesome for after surgery because of the protein.


Lisa's Version of Power Balls
You will think you hit the lottery on this one! Trust me. These are so easy to make and so healthy and your kids will love them!


Power Balls
2 Cups of Old Fashioned rolled oats
(Found in the cereal isle)

1 Cup Extra Crunchy Peanut Butter:
  (I like Jif 3g Sugar).. RNY Gastric Bypass patients need to have less then 6g)

1/2 Cup Raw Honey

1/2 Cup Chocolate Chips (I use Hershey Sugar free.. found at WalMart)

1/2 Cup Dried Cranberries (I use the low sugar ones)

1/2 Cup Sunflower Seeds

3 Tablespoons of Flax Seed


In Food processor pulse Oats, peanut butter, honey, chocolate chips, cranberries, and flax seeds until fully combined. 
--- if wanting to make a large batch I do not recommend doubling the recipe. I complete the mixing of one batch,,, then another... Just complete mixing one batch..

-Line Cookie Baking sheets with wax paper and roll balls or scoop the balls and place on lined baking sheets. Refrigerate for 1 hour. 

-I get a round container and fill them with the balls and I do store them in the fridge and eat them right from there.

-You can also make these are they can be stored in a container for up to 2 weeks. (Great for sports weekends.. my son plays hockey and these are great to take on the road and so healthy!

FYI.. if your kids do not like cranberries.. (mine said over and oer he did not) but loves these but tried a different dried fruit like blueberries or cherries... maybe even raisins.


Sugar per serving (1 ball) is Sugar 4g....

For me I only need to worry about the sugar.... these are also great for the gastric bypass patient because they are the perfect size! No overeating!

RNY Gastric Bypass Recipes! Welcome!!!

Want to be able to have great food when you had gastric bypass RNY Surgery?

The answer is yes! I had gastric bypass in 2010 and lost 170 pounds. I went from over 300 pounds to 130ish... I was determined when I had the surgery I was going to go sugar free and made a lot of effort to make sure I could still enjoy the deserts I loved to make. I do redo recipes so they become sugar free or low in sugar. 

Some people do not know or not aware that when you have the RNY Gastric Bypass you are lucky if when you consume sugar after the surgery you get very very sick. Just imagine the worst flu for 20 mins. This can really ruin a holiday or just a ordinary day. When I first had the surgery and for about 3 years after that I was very very adamant about checking the sugar and if necessary tweaking my beloved recipes. I was one of the lucky ones that if I consumed sugar I was so so sick... So I learned don't eat it... or recreate it! I then I was 130 pounds and pretty much started to dabble and started adding more and more sugar to my diet. I had some problems and next thing I know I gained 50 pounds back in a blink of an eye.

I was very angry with myself and joined the gym and was biking about 8 miles a day everyday and the scale did not move!!!! I started having problems with my left knee and was told I needed a total knee replacement. The surgeon said he would not do the surgery unless I showed him I could lose some weight. WHAT!!! I was so mad... are you kidding me? Do you know how much I weighed? I know I am 180 pounds now but I was over 300 pounds. He was very adamant about showing him I could lose the weight. I left the office and told my husband I needed to go back to basics because the exercising daily was not working so I needed to go back to a sugar free diet. I know some people will tell me... this is all chemicals and is bad for your body. I know but sugar for me is a chemical and I gain weight quick. I was able to lose 20 pounds since I went sugar free and had my surgery 5 weeks ago. After the surgery I decided to eat a little sugar here and there... well thank GOD!!! I got sick. It is called dumping! I was ill.... YAY!!! I was not able to handle sugar again. Even after a jolly rancher I was vomiting! I am now going sugar free again and I am not going to turn back. I think once you know what helps you lose the weight and keep it off you need to do the same recipe! 

So I have created this new blog to show you how you don't just need to buy processed sugar free items but your favorite recipes can be made into sugar free! So everyday I will feature a recipes that I have changed into a tested sugar free recipe.
